Ingredients
2 2/3 c. Sugar
1 c. Vegetable oil
4 eggs
3 c. Sifted flour
1 tsp cinnamon
1 tsp nutmeg
2 tsp baking soda
1 tbsp baking powder
2/3 c. water
2 c. pumpkin, cooked & mashed (fresh or canned)
3/4 c. nuts (walnuts) or seeds
Directions
In a mixing bowl, mix sugar and oil. Beat in eggs one at a time.
On to wax paper, sift together flour, spices, soda, and baking powder.
Add the dry ingredients to the first mixture, alternate with the water, mixing well between additions.
Add the pumpkin, stir well, then stir in the nuts.
Pour into two greased 9x5 inch loaf pans.
Bake in a preheated 350F oven for 50 minutes or until done when tested with a knife or skewer.
Cool about 10-15 minutes and remove from pans.
