Ingredients

  • 2 2/3 c. Sugar

  • 1 c. Vegetable oil

  • 4 eggs

  • 3 c. Sifted flour

  • 1 tsp cinnamon

  • 1 tsp nutmeg

  • 2 tsp baking soda

  • 1 tbsp baking powder

  • 2/3 c. water

  • 2 c. pumpkin, cooked & mashed (fresh or canned)

  • 3/4 c. nuts (walnuts) or seeds

Directions

  • In a mixing bowl, mix sugar and oil. Beat in eggs one at a time.

  • On to wax paper, sift together flour, spices, soda, and baking powder.

  • Add the dry ingredients to the first mixture, alternate with the water, mixing well between additions.

  • Add the pumpkin, stir well, then stir in the nuts.

  • Pour into two greased 9x5 inch loaf pans.

  • Bake in a preheated 350F oven for 50 minutes or until done when tested with a knife or skewer.

  • Cool about 10-15 minutes and remove from pans.
