Chicken Fajita's

Fun meal where everyone gets to assemble their own fajita based on their personal taste preferences.

Components

  • Guacamole

  • Pico de Gallo

Ingredients

  • 1.5 lb chicken breast

  • pita bread

  • green peppers, cut into slices

  • yellow onions, cut into slices

  • guacamole (either from store or recipe below)

  • sour cream

  • mexican blend cheese

  • pico de gallo (either from store or the recipe below)

  • salt

  • pepper

  • garlic

Directions

  • sautee green peppers and onions in a skillet.

  • season peppers and onions with salt, pepper, and garlic.

  • sautee chicken breasts

  • toast tortillas one at a time in a pan on stove to soften, keep in container once toasted.

  • cut chicken into 2-3 inch long pieces across grain.

  • enjoy by everyone putting together their own fajita with any of the ingredients.

Guacamole

Ingredients

  • 4 avacados, pitted, pealed, and cut into chunks

  • 1/2 white onion, sliced

  • 1 clove garlic, minced

  • handful cilantro

  • 1 small jalapeno

  • juice from half of a lime

  • 1 tsp sea salt

Steps

  • Mash together all ingredients

  • Enjoy

Pico de Gallo

Ingredients

  • 6 roma (plum) tomatoes, diced

  • 1/2 red onion, minced

  • 3 tbsp chopped fresh cilantro

  • 1/2 jalapeno pepper, seeded and minced

  • 1/2 lime, juiced

  • 1 clove garlic, minced

  • 1 pinch garlic powder

  • 1 pinch ground cumin, or to taste

  • salt and ground black pepper to taste

Steps

  • Stir the tomatoes, onion, cilantro, jalapeno pepper, lime juice, garlic, garlic powder, cumin, salt, and pepper together in a bowl. Refrigerate at least 3 hours before serving.
