Steak Fajita's
Fun meal where everyone gets to assemble their own fajita based on their personal taste preferences.

Components
Guacamole
Pico de Gallo
Steak Marinade
Ingredients
1.5 lb marinated skirt steak (Either from butcher, or with recipe below)
pita bread
green peppers, cut into slices
yellow onions, cut into slices
guacamole (either from store or recipe below)
sour cream
mexican blend cheese
pico de gallo (either from store or the recipe below)
salt
pepper
garlic
Directions
sautee green peppers and onions in a skillet.
season peppers and onions with salt, pepper, and garlic.
grill marinatinated steak to 145F.
toast tortillas one at a time in a pan on stove to soften, keep in container once toasted.
cut steak in 4-6 inch long pieces, rotate pieces 90 degrees and cut into strips, across grain.
enjoy by everyone putting together their own fajita with any of the ingredients.
Guacamole
Ingredients
4 avacados, pitted, pealed, and cut into chunks
1/2 white onion, sliced
1 clove garlic, minced
handful cilantro
1 small jalapeno
juice from half of a lime
1 tsp sea salt

Mash together all ingredients

Pico de Gallo
Ingredients
6 roma (plum) tomatoes, diced
1/2 red onion, minced
3 tbsp chopped fresh cilantro
1/2 jalapeno pepper, seeded and minced
1/2 lime, juiced
1 clove garlic, minced
1 pinch garlic powder
1 pinch ground cumin, or to taste
salt and ground black pepper to taste
Steps
Stir the tomatoes, onion, cilantro, jalapeno pepper, lime juice, garlic, garlic powder, cumin, salt, and pepper together in a bowl. Refrigerate at least 3 hours before serving.

1/4 c. olive oil
1 small onion, minced
2 cloves garlic, minced
3 tbsp red wine vinegar
1 tsp chile powder
1 tsp ground cumin
1 tsp black pepper
